Our kitchen prepares meals inspired by the Richard Wagner operas, which last until a maximum of 10:00 PM, and we will serve you for approximately 1 hour after the end of the opera. A concert is not an opera!

This is what characterises our kitchen

Our sustainably operating kitchen sources its ingredients predominantly from the region – mostly directly from the producer: milk, yogurt, quark, cheese, goat cheese, eggs, honey, flour, and ice cream all come directly from producers we personally know.

Trout and carp are delivered live whenever possible and then kept in our own pond. (Starting in 2022, we will also offer catfish again). Fruits, vegetables, and asparagus are sourced directly from "Knoblauchsland," the well-known horticultural region west of Nuremberg. From 2022, we can even offer southern fruits from the region – from a special breeding operation in Upper Franconia. With a bit of luck, you might even see our chef tending to her bees, ensuring a fresh supply of honey. And wild dishes couldn't be fresher than those delivered directly by our hunter.


When it comes to meat, we are of two minds anyway:

When we process meat, it should come exclusively from controlled farming, and the animals should not be slaughtered only for their fillets. Therefore, we consciously offer other cuts of meat – not just fillets – as delicious dishes. Und noch ein Tipp – und zwar ein „hopfiger“

Since our restaurant is located in a beer region, it was almost a given that we would receive the certification "Bavarian Beer Culture." Our new beer menu not only offers extensive beer knowledge in an entertaining form but also features regional beer varieties from five different breweries. As a special treat, we offer a "tasting board" – best enjoyed as an aperitif. Our beer dishes on the menu pair perfectly with our beer selection.

Fresh ingredients primarily sourced from the region – perfectly prepared and cooked to perfection: This is what makes our restaurant Lohmühle special! That’s why our kitchen has repeatedly been awarded a medal in the competition "Excellent Bavarian Cuisine – in Franconia." This award places great emphasis on the use of regional products, proper and flavorful preparation, a pleasant ambiance, and friendly, professionally trained staff. We are very proud of this recognition.


Environmental protection and sustainability in our restaurant

In our hotel restaurant, the topics of environmental protection and sustainability play an extremely important role, especially in the kitchen and cellar. The origin of the raw materials is just as essential to us as the sustainable preparation and presentation.

  • Fruits and vegetables mainly come from the nearby "Knoblauchsland"
  • Fish primarily from our own pond or from Deutscher See* (farm-raised)
  • Honey from our own hive (souvenirs) and from a local beekeeper friend
  • Meat exclusively from controlled farming (and "Nose to Tail")
  • Eggs at the buffet from free-range chickens/broiler breeding or barn-raised – all directly from the producer
