Winter brings changes to our daily lives – and to our needs. Our bodies crave more energy, warming foods and flavours that convey depth and tranquillity. This is precisely where our winter cuisine at the Lohmühle comes in: seasonal, balanced and deliberately diverse.
Our winter cuisine: more than just ‘hearty’
Winter food is often hastily equated with ‘heavy’. In fact, heartier cuisine makes physiological sense during the cold season. The body uses more energy to keep itself warm – and benefits from foods that are filling, provide energy slowly and keep you going for a long time.
Our winter menu therefore typically features:
- Stews, which are particularly digestible thanks to long cooking times.
- Rich sauces, which combine minerals and flavours.
- Seasonal winter vegetables and cabbage, which are rich in fibre.
This combination provides warmth from within, lasting satiety and genuine enjoyment – without regret.
Our motto in the kitchen: Think regionally – but remain open to culinary influences
At Lohmühle, we have always stood for two strong culinary pillars:
- Franconian specialities with depth and tradition
- International dishes, each interpreted in a particularly delicious seasonal way
Our diversity is particularly evident in winter. While classic Franconian dishes are now in high season, we deliberately complement them with international delicacies that also focus on winter ingredients, flavours and preparation methods. The result is a cuisine that is both down-to-earth and cosmopolitan.
Winter cuisine & health: a proven combination
Hearty winter dishes not only provide energy, but also important nutrients. Local cabbage and herb varieties, root vegetables and storable ingredients contain:
- lots of fibre
- secondary plant substances
- natural vitamins that support the body in winter
Careful preparation and balanced portion sizes ensure that enjoyment remains in balance – which is exactly what we strive for.
Eating ecologically – especially in winter
Seasonal winter cuisine is also convincing from an ecological point of view. Local ingredients (which we prefer to use) do not require long transport routes, do not need energy-intensive greenhouses, can be stored well and are almost completely usable.
This fits in with our understanding of responsible enjoyment: thinking regionally, shopping consciously and preparing everything with craftsmanship and care.
Winter enjoyment needs atmosphere
Last but not least, winter dining always requires the right setting. A quiet, warm restaurant with cosy rooms, time to enjoy yourself and attentive service make all the difference. Many guests particularly appreciate this relaxed way of dining with us, especially in the darker months of the year.
